lunchbox redux


















mmm, good lunch today for boo: a calzone with sauteed broccoli and cheddar inside, some banana bread, watermelon, and chocolate soy milk. i'm telling you, it's so easy to make a daily calzone (think of it as a homemade hot pocket -- you can put anything inside it). just keep some pizza dough in the fridge, tear off a hunk, pat it into a circle, put filling on one half of the circle, fold it over and squinch the edges, and bake it at 400 degrees for about 15 minutes. i like to either brush the top with a little olive oil or spray it with olive oil spray (oh, oil the baking sheet, too, or you'll be sorry). i am at this very moment baking one of these for bean, who saw boo eating his and thought it looked tasty. why did she see him eating lunch, you ask? and why was he eating lunch at 10:30 am? well, i'll tell you, in the following paragraph.

so, i kept boo home today because he had a red, itchy eye and i feared it might be conjunctivitis (a.k.a. pink eye, but don't you just love the word "conjunctivitis"?). now he seems fine, his eye looks nearly normal, and he's roller blading around and around and around the block with his birthday roller blades and cool black helmet. let's hope the truant officer isn't out patrolling the neighborhood today. but seriously, you can't send a kid with pink eye to school. my plan is to call the doctor tomorrow morning if his eye looks weird. and i keep reminding him: wash your hands like you've got OCD.

you should write an article about your vegan/veggie lunches. Very inspiring. you can give a shout-out to the person you got the idea from but bring it to a larger audience.
