pumpkin pie pancakes

























i am in love with this cookbook -- i've had it for at least a year, and i don't remember making anything in it that at least one of us didn't love. this morning i made bean's favorite pancakes (even though she wasn't here, but was instead waking up from jukado's birthday sleepover party, and eating non-pumpkin pie pancakes at her house). i didn't have any canned pumpkin, but i did have a mysterious can of pureed sweet potato in my pantry, and it filled in just fine. these are so delicious, and can be made non-vegan if you so prefer:

1 1/2 C flour (i used whole wheat pastry flour), mixed in a large bowl with 3 T dry sweetener (i.e. sugar), 1 T baking powder, 1/2 tsp salt, and 1/2 tsp pumpkin pie spice (or create your own with cinnamon, nutmeg, cloves, etc).

combine 1 1/4 C soy milk, 1/3 C canned pumpkin (or sweet potato), 1 T oil in a blender and process til blended. pour wet into dry, stir until just combined.

now cook em on the griddle and serve with maple syrup!
